Welcome


I would like to welcome all visitors, friends & family to my blog. I will be sharing all sorts of things about our life in rural northern British Columbia. We love camping and outdoor cooking as well as hiking, fishing and canoeing.

Over the years I have done a lot of entertaining and have often been asked about my recipes and methods. I was encouraged to start this blog and to write some of my info down - so I hope you all enjoy and please feel free to ask questions and make suggestions.

Pancakes and Syrup


Pancakes and Syrup


Simple Pancakes


Mix in bowl :             Preheat griddle to 400 F


1 cup flour
2 tablespoons sugar
2 tablespoon baking powder
1/2 teaspoon salt


Mix in Separate bowl:


1 beaten egg
2 tablespoons canola oil ( or melted shortening, marg, butter)
1 1/2 cups milk


Make a well in center of flour and pour in liquid - stir to mix (do not over-mix - lumps are ok )


Bake on lightly greased griddle. Flip when bubbles appear on top of first side - cook another 30 seconds on second side.  Make sure you griddle is hot.


Serve with butter and syrup (maple syrup is best)




Now if you don't have any store bought syrup - you can make some quite easily.


Syrup


Add:
2 cups brown sugar
to
1 cup boiling water in a pot - cook for 5 minutes


Then sir in:


1/2 teaspoon maple flavoring
a pinch of salt


Store in covered jar in the refrigerator
